HOT CROSS BUN OATS

Overnight soaking + cooking

 

METHOD

STEP 1:
To make the oats extra creamy either soak overnight, or for about 1-2 hours before preparation.
STEP 2:
Rinse the oats after soak time. In a pot with 2 ¼ C water, salt, cinnamon, ginger and allspice simmer for about 5 minutes, or to desired consistency. In the meantime, blend up the icing ingredients.
STEP 3:
Remove from heat and stir in the vanilla. Top with pecans, raisins and drizzle with maple syrup and optional cacao butter icing.

INGREDIENTS

  • 1 ½ C rolled oats
  • 2 ¼ C water (plus extra for overnight soaking)
  • ¼ tsp fine sea salt
  • 1 ½ tsp cinnamon
  • ¼ tsp ground ginger (add 1/2 teaspoon for a more spicy flavour)
  • ⅛ tsp allspice
  • 3 Tbsp pure maple syrup
  • ½ tsp vanilla
  • 2-4 Tbsp pecan halves
  • Handful of raisins


For the icing:

  • 1 Tbsp Cacao butter, melted
  • 1 Tbsp coconut milk, warmed
  • ½ tsp fresh lemon juice
  • ½ Tbsp pure maple syrup
